Easy classic Crème Brûlée Recipe | Silky, Caramelized perfect texture

Crème Brûlée has a history of over 300 years, originating in France. It features a silky custard base with a crisp caramelized sugar topping. In the 20th century, French chefs popularized the use of a kitchen torch to caramelize the sugar, enhancing the flavor in less time compared to oven broiling.
Along the way, we’ll also learn how to create silky custard and caramel using simple techniques. I’ve always been curious about this dessert and wanted to try making it myself—so let’s make it together!
Ingredients
• 3 Egg yolks
• 35g Sugar
• 100ml Milk
• 200g Whipping Cream
• 1 Tsp Vanilla Extract
• Sugar for Caramelizing
• Hot Water (for the water bath)
Instructions
Prepare the Custard
1. Preheat the oven to 160°C (320°F).
2. In a bowl, whisk together the egg yolks and sugar until smooth.
3. Heat the milk and whipping cream over medium heat until warm but not boiling.
Combine & Strain
4. Gradually add the warm milk mixture to the egg yolks, whisking constantly to prevent curdling.
5. Stir in vanilla extract and strain the mixture for extra smoothness.
Bake in a Water Bath
6. Pour the custard into ramekins and place them in a baking dish.
7. Fill the dish with hot water, covering half the height of the ramekins.
8. Bake for 40 minutes or until the custard is set but still slightly jiggly in the center.
Chill & Caramelize
9. Remove from the oven, cover with plastic wrap, and chill for at least 2 hours.
10. Before serving, sprinkle sugar on top and caramelize using a kitchen torch.
Tips
• Smooth Custard: Strain the mixture before baking to remove air bubbles.
• Water Bath: Prevents the custard from overheating and cracking.
• Perfect Caramelization: Once the sugar starts caramelizing, turn off the torch and let the residual heat finish the job.
