Tortilla Española – A Classic Spanish Omelette Recipe

Introduction

Tortilla Española, also known as Spanish omelette, is one of Spain’s most iconic dishes. Made with just a few humble ingredients—potatoes, eggs, and onions—this dish has been a staple since the 19th century. Originally created as a filling meal for farmers and workers, it has become a beloved comfort food throughout Spain.

In this recipe, you’ll learn how to make a traditional Tortilla Española step-by-step, including how to flip it like a pro. I made this dish because it’s simple, warm, and brings people together. That’s the heart of home cooking.

Ingredients

• 3 medium potatoes, peeled and thinly sliced

• 1 medium onion, thinly sliced

• 5 eggs

• 1/4 cup olive oil

• Salt and pepper, to taste

 • Italian parsley, optional if you like

Instructions

Cook the Potatoes and Onions

Heat olive oil in a non-stick skillet over medium heat. Add the sliced potatoes and onions. Season with salt. Cook for about 15 to 20 minutes, stirring occasionally, until soft but not browned.

Combine with Eggs

In a large bowl, beat the eggs with salt and pepper. Drain excess oil from the cooked potatoes and onions, then add them to the bowl. Gently mix to combine.

Cook the Tortilla

Heat a bit of oil in the same skillet over medium-low heat. Pour the egg mixture into the pan and spread evenly. Cook for 5 to 7 minutes until the edges are set.

Flip the Tortilla

Place a large plate over the skillet and carefully flip the tortilla onto it. Slide it back into the pan and cook the other side for another 5 minutes until fully set.

Serve

Transfer the tortilla to a plate and let it cool slightly. Garnish with Italian parsley. Cut into wedges and serve warm or at room temperature.

Tips

• Slice potatoes and onions thinly for even cooking.

• Cook the vegetables gently to avoid browning.

• Use a spatula to shape the tortilla while cooking.

• Nervous about flipping? Practice with a cold pan first.

• Forgot seasoning? Add salt and pepper before serving. It still works!
