Financiers Recipe | Classic French Almond Cakes
Introduction
Financiers are small French almond cakes with a rich nutty flavor from browned butter. They were first created in Paris during the 19th century for busy bankers who wanted a sweet treat they could enjoy without getting their hands dirty. The golden rectangular shape is said to resemble gold bars, which is how they got their name.
In this recipe, you will learn how to make financiers with simple ingredients, while mastering key techniques such as browning butter and resting the batter overnight for a smoother texture. I chose to bake these financiers as a birthday gift for my grandpa, who always inspired my love for food when I was little.
Ingredients
• 113g unsalted butter
• 150g powdered sugar
• 125g almond flour
• 45g cake flour or all-purpose flour
• Pinch of salt
• 4 egg whites (about 120g)
• 2 tsp vanilla extract
• Toppings like pistachios (optional)
Instructions
Step 1:
Melt butter in a pan over medium heat until golden brown with a nutty aroma. Let it cool.
Step 2:
Whisk powdered sugar, almond flour, flour, and salt in a large bowl.
Step 3:
Add lightly whisked egg whites and vanilla extract. No whipping needed.
Step 4:
Mix in the cooled browned butter until just combined. The batter will be thick.
Step 5:
Cover with plastic wrap and refrigerate overnight.
Step 6:
Preheat oven to 350°F (180°C). Grease molds, fill ¾ full, add toppings, and bake for 15–20 minutes until golden.
Step 7:
Cool in the pan for 10 minutes, then transfer to a wire rack.
Tips
• Do not overcook the butter. Remove it from the heat as soon as it turns golden brown.
• Resting the batter overnight makes the texture smoother and richer.
• Financiers are delicious plain, but toppings like sliced almonds, pistachios, or dried fruits add a festive touch.
