Creamy Gorgonzola Gnocchi Recipe | Easy Italian Comfort Food

Introduction

Gorgonzola gnocchi is a beloved dish in modern Italian cuisine. While it is not a traditional recipe in historic Italian cooking, it has become a popular comfort food in trattorias and home kitchens across northern Italy. Gorgonzola is one of the oldest blue cheeses still produced today, dating back to the 11th century. Its sharp and creamy flavor pairs beautifully with soft potato gnocchi, creating a rich and comforting plate of food.

In this recipe, you will learn how to make a silky gorgonzola cream sauce, how to coat gnocchi without breaking their texture, and how to finish the dish with simple techniques that bring restaurant quality to your home. I made this recipe because dishes like this represent the charm of modern Italian cooking where tradition and creativity meet on the plate.

Ingredients

(Serves 2)

  • 200g gnocchi
  • 45g gorgonzola cheese
  • 100ml heavy cream
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 2 tablespoons white wine (optional)
  • Salt and black pepper to taste
  • Parmesan cheese to finish (optional)

Instructions

Step 1:

Cook the gnocchi in salted boiling water. Once they float, drain them well.

Step 2:

Heat olive oil in a pan and sauté the garlic until fragrant.

Step 3:

Add white wine and let the alcohol evaporate. Pour in the heavy cream and let it simmer gently.

Step 4:

Melt the gorgonzola into the cream sauce and season with salt and pepper.

Step 5:

Add the gnocchi and gently toss to coat. Serve on a plate and finish with a touch of black pepper if you like.

Tips

  • Drain the gnocchi well to keep the sauce creamy and rich
  • Simmer the sauce on medium heat for a smoother texture
  • Toss gently to keep the gnocchi fluffy and evenly coated
