Creamy Clam Chowder in a Bread Bowl | New England Style Homemade Recipe
Introduction
Clam chowder is a beloved New England style soup known for its creamy texture and comforting flavor. Along the coast of New England, clams were plentiful, and settlers combined them with milk and cream brought from Europe. That is how this rich and filling soup was born. Over time it became a classic American comfort dish served in diners and coastal towns.
In this recipe I make clam chowder in a bread bowl. Bread and soup have always been my comfort food, so I wanted to bring them together into one dish that feels playful and satisfying. You will learn how to build layers of flavor with bacon and white wine, how to cook clams without making them tough, and how to prepare a bread bowl that holds the soup without collapsing.
Ingredients
- 6 slices bacon (about 150g), roughly chopped
- 2 medium carrots (about 200g), diced
- 1 celery stalk (about 75g), finely diced
- 1/2 medium onion (about 100g), finely diced
- 4 Tbsp all-purpose flour (about 30g)
- 2 cups chicken broth (about 480ml)
- 1 1/2 cups fresh clams, shucked (about 230g)
- 120ml white wine
- 1 bay leaf
- 1 1/2 tsp Worcestershire sauce
- 1 tsp lemon juice
- 1/2 tsp dried thyme (about 1g)
- 1 1/2 tsp salt (about 7.5g), or to taste
- 1/4 tsp black pepper (about 0.5g)
- 3–4 potatoes (about 450g), peeled and diced into 1cm cubes
- 2 cups milk (about 480ml)
- 1/2 cup heavy cream (about 120ml)
- Round loaf of bread for serving
Instructions
Step 1: Cook the Bacon
Cook the chopped bacon in a pot until crispy and set it aside, leaving the fat in the pot.
Step 2: Sauté the Vegetables
Add the onion, celery, and carrots to the bacon fat and cook until soft and fragrant.
Step 3: Add the Flour and Build the Base
Stir in the flour, then add the chicken broth, white wine, Worcestershire sauce, thyme, salt, and pepper.
Step 4: Add the Potatoes and Dairy
Add the potatoes, milk, and heavy cream. Simmer gently until the potatoes are tender.
Step 5: Add the Clams
Stir in the clams and heat just until they open and cook through.
Step 6: Prepare the Bread Bowl
Cut the top off a round loaf of bread and hollow it out.
Step 7: Assemble and Serve
Pour the hot chowder into the bread bowl and top with crispy bacon and fresh dill.
Tips
- Use thick bread with a firm crust so it holds its shape
- Let the chowder rest briefly after cooking to allow the flavors to settle
- Serve immediately so the bread absorbs just the right amount of soup
