Mexican Corn Cheese Pizza is a fusion dish inspired by elote, a popular Mexican street food. Elote is grilled corn coated with a creamy, tangy, and flavorful sauce. This pizza takes those bold flavors and combines them with a crispy crust, creating a fun and unique twist!
I made this recipe because my Turkish friend recommended it, and I wanted to try a milder, cilantro-free version that still captures the essence of elote.
Ingredients
For the Dough:
• 250g (2 cups) all-purpose flour (or sourdough starter for extra depth!)
• 150ml (⅔ cup) warm water
• 1 tsp salt
• 1 tsp sugar
• 1 tsp instant yeast
• 1 tbsp olive oil
For the Toppings:
• 1 cup cooked corn (grilled or pan-roasted for extra flavor)
• ½ cup Mexican crema (or mix sour cream + a little lime juice)
• ¼ cup mayonnaise (optional for extra creaminess)
• ½ tsp paprika (mild, but add more if you like spice!)
• Chili powder (optional, to taste)
• ½ cup crumbled cotija cheese (or substitute with Parmesan or feta)
• 1 cup shredded mozzarella or Oaxaca cheese
• 1 tbsp lime juice
• 1 tbsp chopped green onion & Italian parsley (instead of cilantro!)
• 1 garlic clove, minced
• Salt & pepper to taste
Instructions
Prepare the Dough
1. In a bowl, mix the flour, salt, sugar, and yeast.
2. Gradually add warm water and olive oil. Mix until a dough forms.
3. Knead for about 10 minutes until smooth. Cover and let it rise for 1 hour.
Prepare the Corn Mixture
1. In a pan, lightly roast the cooked corn until it develops some golden spots. This enhances the flavor.
2. In a bowl, mix the roasted corn, Mexican crema, mayonnaise, lime juice, paprika, chili powder, garlic, salt, and pepper. Set aside.
Preheat & Roll
1. Preheat your oven to 250°C (480°F).
2. Roll out the dough evenly to prevent uneven baking.
Assemble the Pizza
1. Sprinkle mozzarella cheese over the dough.
2. Spread the seasoned corn mixture evenly on top.
Bake
1. Bake for 10-12 minutes, or until the crust is golden brown and crispy.
Add Final Touches
1. Top with crumbled Reggiano (or cotija cheese), green onion, and parsley.
2. Slice and enjoy!
