Sweet & Juicy Teriyaki Chicken | Easy Japanese Recipe
Introduction
Teriyaki Chicken is one of the most beloved Japanese dishes around the world.
Originally, teriyaki began as a cooking method for fish in Japan. The word “teri” means “gloss,” and refers to the shiny glaze made from soy sauce, mirin, and sugar. Today, chicken teriyaki has become a global favorite, known for its tender texture and sweet-savory flavor. This one was requested by my brother Soichi. He wanted to see more Japanese dishes!
In this recipe, you’ll learn how to make juicy teriyaki chicken thighs with a glossy glaze—all in one pan.
I created this version to highlight the natural richness of the sauce without relying on crispy skin, making it perfect for a softer, melt-in-your-mouth finish.

Ingredients
• 400g boneless chicken thighs
• 3 tbsp soy sauce
• 3 tbsp mirin
• 2 tbsp sugar
• 1 tbsp sake
• A bit of grated ginger (or tube ginger)
• Cooking oil
• Optional: green onion, sesame seeds for garnish
Instructions
Preparing the chicken
Cut the chicken into bite-sized pieces and season lightly with salt and pepper.
Searing the chicken
Heat oil in a pan over medium heat. Add the chicken skin-side down and sear until lightly golden.
Making the sauce
In a small bowl, mix soy sauce, mirin, sugar, sake, and ginger.
Simmering the sauce
Pour the sauce into the pan and simmer until it thickens and coats the chicken.
Serve
Plate the chicken and top with green onion and sesame seeds, if desired.
Tips
• Use medium heat to sear the chicken gently without burning the skin.
• Let the sauce simmer until glossy—this gives the chicken that signature teriyaki finish.
• Add garnishes like green onion or sesame seeds right before serving for a fresh look.
